Vindaloo-Style Pork

Ingredients

  • Country-style Pork Ribs, trimmed and cut into 1-1/2 inch pieces
  • Salt
  • Pepper
  • Vegetable Oil
  • Onion, chopped fine
  • Garlic, minced
  • Mustard Seeds
  • Garam Masala
  • Hot Paprika
  • 2 tbsp All-purpose Flour
  • 2 cups Chicken Broth
  • 1 (14.5 ounce) can Diced Tomatoes, drained
  • Cilantro, minced
  • 1 tbsp Red Wine Vinegar

Steps

  1. Pat Pork dry with paper towels and sprinkle with salt and pepper. Heat 1 tbsp oil in medium saucepan over medium-high heat until just smoking. Brown pork lightly on all sides, about 6 minutes, transfer to bowl.
  2. Heat remaining 1 tbsp oil in now empty saucepan over medium heat until shimmering. Add onion, garlic, mustard seeds, garam masala, paprika, and salt. Cook stirring often until onion is softened and spices are fragrant, about 5 minutes. Stir in flour and cook for 1 minute.
  3. Slowly whisk in broth, scraping up any browned bits and smoothing out any lumps. Stir in browned pork along with any accumulated juices and tomatoes and bring to simmer. Reduce heat to medium-low, cover, and simmer until pork is tender, about 30 minutes. Stir in cilantro and vinegar and season with salt and pepper to taste. Serve.
