Butter Chicken

Ingredients

  • 1/2 c Plain Yogurt (full fat)
  • 1 tbsp Lemon Juice
  • 1 tsp tumeric
  • 2 tsp garam masala
  • 1 tsp cayenne powder
  • 1 tsp cumin
  • 1 tbsp fresh ground ginger
  • 2 Crushed garlic
  • Chicken thigh cut into bite size pieces
  • 2 tbsp butter
  • 1 c tomato puree
  • 1 c heavy cream
  • Pinch of Sugar
  • Salt to taste

Steps

  1. Combine yogurt, lemon juice, tumeric, garam masala, cayenne, cumin, ginger, and garlic with the chicken in a bowl. Cover the bowl and marinate for 3 hours or overnight.
  2. Heat skillet over high heat and melt butter in the pan.
  3. Remove the chicken from the marinade and place into the skillet. Save the extra marinade in the bowl off to the side.
  4. Cook chicken until the outsides are all cooked (they may not brown due to the marinade, this is fine, as long as all sides of all the pieces of chicken turn white).
  5. Add tomato puree, cream, sugar, and salt along with the extra marinade you saved earlier. Bring to a simmer and reduce heat to low. Simmer for 20 minutes.

Notes!

I was so pleased to find out how easy butter chicken is. It seems like a lot of ingredients, but most of it is just seasonings for the marinade. Marinating is always a time investment, but making the marinade is very quick, if you're at home all day you can just do it around lunch time and then dinner is ready to cook up in about 30 minutes later in the day.

Serve over rice and eat with naan.
