Grilled Cheese - Bacon and Goat Cheese
Ingredients
- Sourdough Bread
- Goat Cheese
- Bacon cut into pieces about 2cm wide
- Onion diced
- Butter
- Salt and pepper to taste
Steps
- Heat a skillet over medium high heat and then add in your bacon.
- Cook the bacon until its just under your desired chewy/crispiness. Then add the onions.
- Turn the heat down to medium and cook until the onions start to caramlize and get jammy.
- In another skillet over medium heat melt enough butter to cover the bottom.
- Place a slice of bread in the skillet and crumble goat cheese over top. Then layer on the bacon and onion mixure. Make sure the whole slice is covered.
- Cook until the bottom of the bread is at your preferred level of toastedness. Placing a lid over the pan will trap the heat and can help the cheese melt faster as well.
- Place another slice of bread on top, then flip the sandwich and cook until the bottom of the new bread is also at your preferred level of toastedness.
- Remove from heat, slice in half, and serve.

This is my favorite fancy grilled cheese, but any kind of combination of cheese and bread is going to be a winner in my book, so keep an eye out for any more grilled cheese recipes that tickle my tastebuds.
I usually make a big batch of the bacon onion mixture (a whole package of bacon and 3-4 onions worth) and then store it to make sandwiches throughout the week. The separate skillet and butter are for future sandwiches, but your first sandwich can be cooked directly in the bacon grease if you don't mind scooping the bacon onion mixture into a bowl to get it out of the way. I am a big advocate for cooking in bacon grease when you can.
