Hummus

Ingredients

  • 1 can soaked chickpeas (rinsed)
  • Garlic/li>
  • Olive oil
  • Juice of 2 lemons
  • 1/2 c tahini
  • Cold water
  • Salt

Steps

  1. In a food processor combine lemon juice, 2-3 cloves of garlic, and a healthy pinch of salt until the galric is finely chopped.
  2. Add tahini ad blend until creamy.
  3. While blending, slowly add 2 tsbp of cold water and continute blending until very smooth.
  4. Add the chickpeas to the food processor and blend. While blending drizzle in olive oil slowly until the miixture is very smooth. You can also slowly add additional water if necessary.
  5. Serve in a bowl with pita, pretzles, vegetables, or other food items for dipping.

Notes!

For restaurant smooth and creamy texture I recommend hitting it with an immersion blender at the end. You can also soak your chickpeas in hot water for about 20 minutes for a more smooth texture.

Hummus is another dish that is pretty neutral in flavor and therefore super customizable. Common flavor additions include roasted red peppers (add with the chickpeas), dill (add with the tahini), and paprika (add at the end), but definitely feel free to add any flavors you think will go well, and look up hummus recipes for delicious customization options.
