Lemon Vinaigrette
Ingredients
- Juice from 3-4 lemons
- 1-2 garlic cloves, minced
- Squeeze of dijon mustard
- 1/4-1/3 c olive oil
- Pinch of thyme
- Pinch of oregano
- Salt and pepper to taste
Steps
- Add all ingredients to a mason jar, bowl with a lid, or some other container with an airtight lid.
- Shake vigorously for 2-3 minutes, until everything is well combined.
- Store in the fridge. If it firms up simply let it sit at room tempurature for about 30 minutes.
Notes!
Adjust the amount of lemon juice and olive oil to your tastes for how tart you want the vinaigrette to be.
The mustard is there to act as an emulsifier for the vinaigrette so make sure your squeeze of it is pretty generous.
This can be used however you normally use vinaigrettes in your household, but my favorite way to use it is for dressing pasta salad.
