Ingredients

  • Shredded parmesan cheese
  • Pepper to taste
  • Ground cayenne to taste

Steps

  1. Pre-heat oven to 400 (f) and line a baking sheet with parchment paper.
  2. Heap small mounds of parmesan cheese evenly spaced across the parchment paper and then pat each mound gently into a flat circle. It will spread out a little while cooking so leave space between each mound.
  3. Lightly season each circle with a little pepper and cayenne.
  4. Bake 3-5 minutes, or until golden brown.
  5. Let cool until they firm up before removing from the baking sheet and serving.

Notes and Stories!

My mom (hi mom!) makes parmesan crisps fairly regularly. Recently she's started seasoning them with cayenne and it absolutely blew my mind. I'm a cheese kind of girlie, so even unseasoned parmesan crisps are excellent to me, but the first time she made them with cayenne I think I ate like 10 in a row.

Parmesan crisps are great on salads, in soups, and dipped in hummus. Or if you're a cheese fiend like me you can just shove them directly in your mouth like chips.
