Potato Skins

Ingredients

  • Your favorite kind of potatoes
  • Your favorite kind of shredded cheese
  • Bacon
  • Melted Butter
  • Salt
  • Sour cream for serving (optional)
  • Chives for serving (optional)

Steps

  1. Preheat oven to 450 (f).
  2. Wash potatoes and pat dry with a paper towel. Pierce the skin all over with a fork.
  3. Brush the outside of the potatoes with melted butter and then sprinkle salt over the entire outside.
  4. Place potatoes on a baking sheet lined with tin foil and the put in the oven to cook for 30 minutes or until soft all the way through.
  5. Cook the bacon in a skillet to your preferred chewiness/crispiness.
  6. Crumble or chop the bacon into small bits.
  7. Remove from the oven and let cool until you can safely handle the potatoes.
  8. Cut the potatoes in half and carefully scoop out most of the insides, leaving enough for the potato skins to retain their shape, but removing enough to create a divot for toppings to sit in..
  9. Preheat the oven broiler
  10. Layer in shredded cheese and bacon and organize the potato skins on the baking sheet again..
  11. Cook the potato skins under the broiler for 2-3 minutes or until the cheese is melted.
  12. Serve hot topped with sour cream and chives if desired.

Notes!

Temperature and cook time in recipe listed for russet potatoes, adjust as needed if using a different kind potato.

Along with salt and butter I also like to season the potato skins with black pepper or cayenne.

Save the potato that you scoop out of the skins and make mashed potatoes or gnocchi!
