Carrabba's Chicken Bryan - COPYCAT
Ingredients
- Olive oil
- Italian seasoning
- Fresh lemon juice
- Garlic, minced
- Chicken breasts, bonless skinless
- Salt
- Pepper
- Butter
- 1 medium yellow onion, finely diced
- 1/3 c Dry white wine
- Fresh basil, chopped
- Sundried tomatoes, roughly chopped
- Goat cheese.
Steps
- Combine a few tbsp of olive oil, a healthy pinch of italian seasoning, 2-3 minced garlic cloves, approx 1/4 c lemon juice in a large ziploc bag. Add chicken breasts, seal the bag, and move everything around until chicken is well coated in the marinade. Marinate in the fridge for a minimum of 30 minutes.
- While chicken is marinating: melt 1 tbsp of butter in a pan on the stovetop.
- Add onion and cook until onion is translucent.
- Add white wine and 1/4 c lemon juice. Bring to a boil and cook until liquid is reduced to about 1/2 c.
- Reduce heat to low and add basil. Add butter a few tbsp at a time, allowing the butter to melt and whisking to incorporate before adding more, until 12 tbsp have been added total (a stick and a half)..
- Season sauce with salt and pepper and remove from heat. Set to the side to use later, if sauce starts to solidify before you use it simply reheat over medium low heat.
- Cook chicken on a grill or stovetop over high heat until it is cooked through.
- Plate the chicken and top with goat cheese and sundried tomatoes. Pour sauce over top.
Notes!
I believe this dish is supposed to be grilled, but I live in an apartment and it still tastes delicious on the stovetop.
